Time and temperature: the two keys to good cooking

Overcooked meat, burnt caramel, mushy pasta: most kitchen mishaps come from poorly watched timing or a guessed temperature. Two simple tools are enough to avoid them.

  • A timer measures time: eggs, pasta, rice, cakes, dough resting time. Mechanical with no battery or digital to the second, it sticks to the fridge or cooker hood.
  • A probe thermometer measures the core temperature: meat, poultry, frying oil, jam, chocolate. Ours reads from -50 to +300 °C in 2 seconds.

Frequently asked questions

Do I need a thermometer if I already have a timer?

They complement each other: the timer tells you when to check, the thermometer tells you whether it is cooked. For meat, frying and sugar, only temperature is reliable.

Mechanical or digital timer?

A mechanical timer needs no battery and is set with a twist. A digital timer shows seconds, can also count up and rings louder.

How do you check the temperature of meat?

Insert the probe into the centre of the piece, away from bone and fat, and wait for the reading to settle, in 2 to 3 seconds.
